Starkey apples are a rare old Maine variety discovered in Vassalboro after a long detective effort by John Bunker. They have textured pinky-red mottling over a yellow base, with golden freckles and some russet netting. Starkeys have juicy flesh and a dense, form texture. Their flavor is unique and excellent, so good they often get eaten fresh before they can be used for cider, applesauce, or pies.
