Paula Red apples are an early season apple that's been growing increasingly popular in Maine in recent years. Its dark red skins land somewhere between a McIntosh and deeper purple varieties, and its flavor is a well-balanced blend of sweet and mildly tart. It's crisp and juicy--ideal for fresh eating. It cooks down quickly, making them fantastic for applesauce, but not the best choice for pies or pastries where you want some pieces left intact.
Paula Reds sweeten noticeably as they age, changing the flavor delightfully over time. They are not a true keeping apple and won't store as well as other varieties. It is best to use them or move them as you get them, enjoying this apple at its peak.
