Bananas are both sensitive to and producers of ethylene gas, which speeds up ripening and eventually spoilage in fresh produce. If at all possible, bananas should be stored away from other produce (unless you purposely want to hasten ripening in produce like tomatoes or some fruit). They should be stored in warmer zones between 55 - 60°F to prevent chilling damage.

STAGE 2 bananas are light green, with the color beginning to shade into yellow.
