"White with a speckled yellow 'eye', the classic Maine-type Yellow Eye has a rich, very savory flavor and is exceptionally rich for a white bean. The Yellow Eye is another one of our most popular heirlooms, and is a favorite for traditional baked beans. They are also a good all-purpose bean making excellent soup, salads, and side dishes.
