"La Raclette de Compton Au Poivre is a farm cheese made with organic cow milk, then aged for 60 - 90 days. Its washed rind is copper colored. It is a semi-soft, supple and melty cheese with flavors of butter and hazelnut. Organic red peppercorns run through the center of the cheese, releasing their aromas under heat." - Adapted in translation from Fromagerie La Station's website
Raclette cheeses were traditionally carried by shepherds with them as they moved cows between pastures. These Swiss-style cheeses would be placed next to the fire to soften, and the melting cheese would be scraped onto bread for the evening meal. Serve yours with traditional accompaniment from potatoes, cornichons, pickled onions, crusty bread, and a warm beverage, which is thought to aide digestion.
