Buckwheat has been grown in Northern Maine's St. John Valley all the way back to 1786, but didn't become the staple crop until the 1850s when several years of wheat failures threatened famine. Ployes, the savory flatbread pancakes, became the foundation of everyday Acadian meals, often served with baked beans and salt pork, or the region's famous chicken stew. Families relied on buckwheat ployes because they nourished and satisfied crowded tables of hardworking bodies.
