Their red skins contrast with their light interiors, presenting beautifully on the plate or the fork. Potatoes store best in dark cold storage. They will green over time when exposed to light. Potatoes will sprout from their eyes when stored in warm zones; sprouts can be knocked off gently and the potato can still be used.
