Fermented products with live cultures keep best in cool, refrigerated storage, which slows the (healthy) bacterial activity. It is common for krauts and other fermented products to bubble, fizz, or spill a bit of liquid over. This activity is why it's common for fermented krauts and kimchis to have a sticker that allows the air and pressure exchange instead of an airtight seal on the lids.
