With the honeynut squash, plant breeders set out to take a classic butternut and condense its sweetness and flavor into a just-right smaller size with a thinner skin. They knocked it out of the part with that one, creating a tawny small butternut with concentrated flavor. Oven-roast them in the half, wedges, or cubes, and enjoy the caramelization of their naturally sweet flesh. They make for a sweeter soup or pie base. They're especially nice adding a seam of sweetness to balance heat without curry bases getting too sugary.
