"Our family has been pressing cider to make jelly in the same way on the same Vermont farm since 1882. We use it with meats, and on toast and sandwiches. We evaporate one gallon of cider for every 20 ounces of of jelly. Nothing is added, neither sugar nor preservatives."
"Cider jelly is a tart reduction of apple cider of about 9 to 1. The right apples at the right stage of maturity have enough sugar, acid, and pectin to gel without adding anything--neither sugar nor pectin--to their cider. So cider jelly contains nothing but concentrated apple cider. It's a strong, tart jelly--great on toast and bagels, served with a cheese board, or accompanying meats and stews." - Adapted from Wood's Cider Mill website
