Watermelon radishes offer a balance that's pleasing to the spirits--they're a round, large radish in the normally cylindrical daikon radish family. Their outsides are a gentle pale white and pastel green that open to reveal a vibrant magenta-blush interior. As part of the mustard family, their flavor profile is pleasingly peppery without scorching the palate. Like a good fairy tale character, they get spicier as they get bigger. 

Sliced thin, the contrast of their watermelon-pink core and pale outer ring make for a beautifully striking presentation.
