Kohlrabi, Green - 25 LB - IPM - Local From Maine

Mmm, kohlrabi... this unusual vegetable defies easy categorization. It's most closely related to wild cabbage, does in fact pair well with ham, and works fantastically in a shredded salad. It's round and solid like a turnip, but grows above ground and sprouts Sputnik-like leaves from its top and edges. Eaten raw, it has a crisp crunch and a mild bite like a radish, but also a slight sweetness like broccoli stems. You can roast it, throw it in a soup, serve it with the traditional side of cream, or most commonly munch on it raw as snacks or in salads. Once you try it, you'll find there's nothing quite like it!

These come neatly trimmed, but kohlrabi leaves and stems can be used like kale or collards. Kohlrabi likes cold refrigerated storage. Early season kohlrabi are more tender and can be used with the skins on. Skins on larger, more mature kohlrabi can be tougher and often work better after peeling.
